Can it be gluten-free?
Yes, but at this time I have not worked out the kinks of alternative flours. If you are gluten sensitive (like me) I am happy to say that I only use unbleached, premium grade Bread flour (mostly an organic blend), which I personally find more gentle in digestion.
Not yet. I would be so happy to work on this, or even collaborate with another baker, or just promote another baker who achieved this - for me, the challenge is diversification of inventory.

Folar was originally a dessert bread, but it's so much more. It can be used for breakfast French Toast, Lunch Sandwiches, Dinner rolls, or by itself as a whole snack. At this time, The Humble Swan is dedicated to providing the highest quality Folar for various applications. In the future, I hope to add more diversity to my menu.
